Ingredients

  • 1 ¾ cups of all purpose flour
  • ½ cup of white sugar
  • 1 tablespoon of baking powder
  • ½ teaspoon of salt
  • ½ cup of semisweet chocolate chips
  • 1 egg
  • ¼ cup of vegetable oil
  • ¼ cup of milk
  • 1 cup of mashed ripe bananas (about three)

Instructions

  • Preheat oven to 400 degrees F.
  • Line muffin trays with paper or silicone liners.
  • Measure and mix dry ingredients together in a large bowl.
  • Make a well in the middle of the bowl.
  • Beat the egg in a medium sized bowl until frothy.
  • Add all other wet ingredients with egg.
  • Pour wet mixture into the well.
  • Stir only to moisten, batter will be lumpy.
  • Grease muffin cups or line with paper/silicone liners and fill ¾ full.
  • Bake for 15-25 minutes or until golden brown.
  • Let cool and enjoy!
